Beans are an essential part of Colombian cuisine and are eaten as a main dish. There are different varieties such as Bola Roja, Cargamanto Blanco and Cargamanto Rojo.

Preparation

  1. Rinse and soften beans in water according to package directions.
  2. Add beans to a saucepan and cover with 2 inches of water. Bring to a boil, reduce heat and cook until tender, which takes about 1 hour.
  3. Add the carrot, potato, garlic, green plantain, sofrito and sazón. Cook for about ½ hour.
  4. Add Adobo and adjust consistency, adding more water if too thick.
  5. Serve beans with white rice.
