Beans are an essential part of Colombian cuisine and are consumed as a main dish. There are different varieties such as Bola Roja, Cargamanto Blanco and Cargamanto Rojo.

  1. Rinse and soften the beans in water, according to the package directions.
  2. Add the beans to a saucepan and cover with 2 inches of water. Boil, lower the heat and cook until they are tender, which takes about 1 hour.
  3. Add the carrot, potato, garlic, green banana, sofrito and seasoning. Let cook for about ½ hour. 
  4. Add the marinade and adjust the consistency, add more water if needed when it it too thick. 
  5. Serve the beans with rice.
