Did you know that yucca is a white tuber with a texture similar to that of a potato? It is an essential ingredient in Latin cuisine and can be prepared in numerous ways, for example, fried with aji amarillo sauce. Finger-licking good!

  • 1 hand of sliced thyme

Preparation

  1. In a pan place the cassava, water, and salt to boil it until it is soft following the packaging instructions.
  2. Once it is ready take the cassava out of the water and let it dry.
  3. In another pan place the oil and fry them until they are golden, let them sit in a plate.  

For the sauce: 

  • Place in a bowl the mayonnaise, the lemon juice, Goya´s Sazón with annatto, yellow pepper paste, mix all together and add the panela as an optional ingredient. Add salt to taste. 

Plate: 

  • Place in a plate the fried cassavas and decorate with sliced thyme, serve with the prepared sauce.
