This delicious coconut ice cream dessert is an island favorite, especially around old San Juan, Puerto Rico, where street vendors' carts offer frozen coconut balls like these as a refreshing antidote to the tropical heat. Before you book a flight to the island, try this easy-to-prepare recipe that captures the authentic flavor of the region. The key to making it is two of our signature products: coconut cream, which adds a sweet coconut flavor, and coconut milk, which gives it a creamy, smooth texture. Mix these two products in an ice cream maker and you will find that it is the closest you can get to a trip to the Caribbean without leaving your kitchen.

Preparation

  1. Blend the coconut milk and coconut cream in a blender until smooth and homogeneous, about 1 minute. Transfer the mixture to a bowl and stir in the water and the 1/2 cup of shredded coconut. Let it rest until it loses all temperature.
  2. Place the resulting mixture in a 2-liter ice cream machine, and follow the manufacturer's instructions. After processing the mixture, take it to the freezer and freeze until the ice cream has hardened.
  3. To serve, we recommend decorating with a pinch more shredded coconut. The decision is yours!
