Change up the daily routine of preparing chicken with this flavorful chicken with lemon and spices. The main ingredient, GOYA® Adobo with Pepper, adds a unique flavor your family will love. Enjoy this easy chicken dish baked in the oven, or grilled outdoors.

Rations:
  • 0.75 cup of of Aceite de Oliva Único
  • 3 spoons of lemon juice
  • 2 spoons of chopped fresh spices (such as thyme, rosemary or oregano)
  • 2 spoons of garlic finely chopped
  • 1 spoon of of Adobo with GOYA pepper
  • 4 pieces of chicken with bone (about 900 gr)

Preparation

  1. In a bowl, combine olive oil, lemon juice, spices, garlic and adobo. Pour mixture into a large container with a lid, or a large zip-top bag. Add chicken until completely covered. Transfer to refrigerator and marinate for at least 2 hours, up to 24 hours maximum.
  2. Remove chicken from marinade and reserve sauce. Heat oven to 220˚C (or heat grill to medium-high). Place chicken skin side up on a foil-lined baking sheet and drizzle with reserved marinade. Sprinkle lightly with Adobo. Cook chicken until golden brown and cooked through (or until it registers 70˚C on a quick-read thermometer when inserted into the chicken thigh without touching the bone), about 25 minutes.
  3. If grilling, place chicken skin side down on grill over direct heat, sprinkle lightly with Adobo. Cook until skin turns golden brown and crisp, about 10 minutes. Turn chicken over and grill over indirect heat, basting occasionally during cooking with reserved marinade, until chicken is cooked through, about 15 minutes more. (Or until internal temperature registers 70˚C on quick-read thermometer when inserted into thigh without touching bone.)
