Preparation

  1. Cook the cassava in an air fryer for 20–25 minutes at 180°C (350°F).
  2. In a bowl, mix the cabbage, onion, tomato, lime juice, vinegar, a pinch of GOYA Adobo with pepper, and a drizzle of GOYA Olive Oil. Let it rest for a few minutes.
  3. To serve, place a portion of hot cassava on a banana leaf if desired.
  4. Top with the fresh salad.
  5. Just before serving, add the pork cracklings to keep their crunchy texture.
