Rations:
  • 800 grams of firm white fish (hake, croaker, or similar), cut into large pieces
  • 2 sliced ripe tomatoes
  • 1 thinly sliced large onion
  • 1 sliced red bell pepper
  • 1 sliced green bell pepper
  • 2 minced garlic cloves
  • 1 can of Coconut milk can
  • 2 tablespoons of Único Olive Oil
  • 1 squeezed lime
  • 1 chopped bunch of fresh cilantro
  • 1 pinch of salt to taste
  • 1 pinch of Complete Seasoning

Preparation

  1. Season the fish with salt, pepper, and lime juice. Let it rest for 15–20 minutes.
  2. In a large pot or casserole, place a layer of onion, tomato, and bell peppers. Add part of the minced garlic.
  3. Place the fish pieces on top and cover with another layer of vegetables and the remaining garlic.
  4. Pour the coconut milk and olive oil over the top.
  5. Cook over medium-low heat for 15–20 minutes, gently moving the pot without stirring with a spoon.
  6. Add Goya Total Seasoning and chopped cilantro at the end of cooking, and serve hot.
