Rations:
  • 4 units of Frozen green banana
  • 1 pound of crispy pork cracklings (or fried bacon)
  • 4 smashed garlic cloves
  • 4 spoons of olive oil
  • 1 bottle of frying oil
  • 1 pinch of salt and pepper to taste

Preparation

  1. Thaw the Goya plantains and cut them into slices about 3 cm thick.
  2. Heat oil and fry them over medium-high heat until tender and golden.
  3. Remove and drain on paper towels.
  4. In a mortar, mix some of the fried plantains with garlic, olive oil or butter, pork cracklings, salt, and pepper. 
  5. Mash until combined.
  6. Add the remaining plantains little by little, continuing to mash until fully integrated.
  7. Shape the mixture into a compact ball or half sphere.
  8. Serve hot, on its own or with meat, chicken, seafood, or sauce.
