There's nothing better to start a new day than this tasty Tortilla and Egg Tower. In this dish, corn tortillas are topped with creamy GOYA® Red Bean Stew, cheese, bacon, tomatoes, avocados and fresh onions. To serve, the tortillas are topped with all the ingredients in a tower shape, and topped with a freshly fried egg. Warning: You'll want to start with a good appetite and a few napkins!

  1. Heat the oven to 200°C. Brush both sides of the tortillas with 1 tablespoon of olive oil using a kitchen brush. Place on a baking sheet and bake in the oven for about 10 minutes. To begin to assemble the torres, spread the beans over the tortillas and cover with white cheese and about two thirds of the bacon. Put back in the oven for about 6 minutes or until heated through.
  2. Meanwhile, heat 1 tablespoon of olive oil in a nonstick skillet over medium heat. Add the eggs and cook until the whites are set, about 2 to 3 minutes. Remove the tortilla towers from the oven and top with the sliced tomato, avocado, onion, and just at the end the fried egg. Garnish with cilantro and serve with Adobo and Salsa Taquera or Salsa Verde.
