  1. In a bowl mix the cooked and well-drained quinoa, the blanched peas, the diced avocado and the fennel bulb cut into very thin slices with the mandolin.
  2. Prepare a dressing with extra virgin olive oil, lemon juice, mustard, salt and a dash of cider vinegar.
  3. Dress the salad and add the coriander leaves separated from the branches.
