Heat the olive oil in a large saucepan over medium heat. Add onion and cook, stirring occasionally, until tender, about 6 minutes. Add cauliflower, coconut milk, beans, seasoning, salt and 2 cups of water. Lower the heat and cook until cauliflower is soft, about 20 minutes.
Mix using your hand or a standard mixer, processing it until it is smooth. Serve in bowls, drizzled with olive oil and a pinch of scallions.
