This delicious dish is perfect as a side dish, it is very rich in protein, it is loaded with flavor, and the best thing is that it is very easy to prepare! Here, the nutritious GOYA® Organic Quinoa is simmered with sofrito and orange juice, then the large and succulent Chickpeas with their intense flavor are added, along with fresh mint, parsley and hazelnuts.   • 1 tablespoon of Único Olive Oil
  • 2 tablespoon tomato stir fry
  • 1 cup of GOYA Quinoa
  • 0.75 cup orange juice
  • 1 tablespoon salt
  • 1 cup of Chickpeas extra
  • 0.5 cup mint leaf
  • 0.5 cup toasted hazelnuts
  • 0.5 cup chopped parsley

Preparation

  1. Combine oil, Recaito, quinoa, orange juice, salt and ¾ cup water to boil. Simmer covered over medium-low heat, until liquid is absorbed and quinoa is tender, 20 minutes. Stir in chick peas. Remove from heat and let stand, covered, for 5 minutes. Stir in mint, parsley and hazelnuts.
