Tacos are an everyday food in Mexico, with a wide variety of fillings. They are traditionally made with nixtamalized corn tortillas, although wheat tortillas are also used in some cases. When tacos made with wheat tortillas are tightly rolled and fried in oil or cooked in an air fryer until crispy, they are called flautas.

Their name comes from their resemblance to tubes or “flutes.” This delicious and crispy variation originated in Jalisco, Mexico, where it is very popular and commonly served as a snack or appetizer. Here, the filling of choice is stewed chicken with cheese, but you can substitute it with beef or pork using the same flavor base we are sharing below.

Ingredients

Rations:
  • 5 tablespoons of Único Olive Oil
  • 2 white onions
  • 3 minced garlics
  • 1 can crushed tomatoes
  • 3 chopped scallions
  • 2 cups boiled and shredded chicken
  • 2 cups of chicken broth
  • 1 cup melting cheese (Latin-style cheese or mozzarella)
  • 2 sprigs fresh coriander
  • 1 teaspoon of Adobo with GOYA pepper
  • 1 package of Wheat Totillas
  • 1 shredded lettuce
  • 1 sour cream
  • 1 packet of Sazón Goya

Preparation

  1. Heat 2 tablespoons of olive oil in a pan and sauté the finely chopped vegetables, crushed tomatoes, Goya Adobo, and Goya Sazón with Coriander & Annatto for about 5 minutes, stirring until the vegetables soften.
  2. Add the shredded chicken and chicken broth. Stir, adjust the seasoning to taste, and cook over medium heat until the broth has reduced, approximately 10 minutes. Let the mixture cool.
  3. To assemble the flautas, place the chicken filling and a tablespoon of cheese at one end of each tortilla. Roll the tortilla tightly but gently, pressing firmly enough to keep the flauta securely shaped so it does not come apart during cooking.
  4. Preheat the air fryer to 180°C (356°F). Arrange the flautas close together while leaving some space between them for extra crispiness. Brush generously with Único Premium Olive Oil and cook for 5 minutes on each side.
  5. If you prefer to fry the flautas in oil, heat the oil well. Secure the ends of the flautas with toothpicks to keep the filling inside, then fry, turning as little as possible, until they reach your desired color and crispiness.
  6. To serve, place a bed of shredded lettuce on the plate, arrange the flautas on top, and garnish with sour cream, Goya hot sauces, crumbled fresh cheese, and cilantro. Serve and enjoy!
