  1. In a medium bowl, combine the red pepper, yellow pepper, onion, and zucchini. Add the Olive Oil, Total Seasoning and Seasoning and stir to combine. Set the vegetables aside.
  2. Heat a large nonstick skillet over medium-high heat, and add the vegetables. Cook, stirring occasionally, until vegetables are tender, about 10 minutes. Alternately, heat grill over medium-high heat. Wrap the vegetables completely in aluminum foil and roast them, turning the vegetable package over once, until tender, about 20 minutes.
  3. Then spread 2 tbsp. refried beans in the tortilla. Top with ¼ cup cooked vegetables and pico de gallo, if desired. Repeat with the other ingredients. Fold the tortillas and serve.
