Perfect balance between flavors and textures. In each bite you will find the acidity of the passion fruit present in a jam previously balanced with sweet notes. Its soft but firm cream, mixed again with the passion fruit, adds more character to this dessert that, in harmony with the crunchy flavor of the cookie flavored with the creamy profile of the butter, delivers an “umami” symphony in each spoonful.

  • 1 package of Passion Fruit Pulp
  • 3.5 cups heavy cream
  • 1 cup condensed milk
  • 2 envelopes unflavored gelatin
  • 2 packets golden cookie
  • 0.5 cup melted butter
  • 3 tbsp. sugar
  • 2 mint leaves, for garnish

Preparation

  1. Crush the golden cookies in a food processor or with a rolling pin until fine crumbs are obtained.
  2. Mix the cookie crumbs with the melted butter, forming a compact dough.
  3. Place this mixture in the base of a springform pan or individual ramekins, pressing with a spoon to make it uniform. Place in the refrigerator while preparing the filling.
  4. Dissolve the unflavored gelatin envelopes in 1/4 cup cold water and let stand 5 minutes. Then heat in a double boiler or microwave for 15-20 seconds until completely dissolved.
  5. In a large bowl, mix the thawed passion fruit pulp with the condensed milk and sugar.
  6. Whip the heavy cream to a semi-whipped (slightly thickened) consistency.
  7. Add the dissolved gelatin to the passion fruit mixture, whisking constantly to integrate well. Then, fold in the whipped cream with wrapping motions to maintain the airy texture.
  8. Pour the passion fruit mixture over the cooled cookie base. Smooth the surface with a spatula.
  9. Refrigerate for at least 4-6 hours or until the dessert is completely firm.
  10. Garnish: before serving, decorate with mint leaves for a fresh and elegant touch. If desired, you can add some fresh passion fruit pulp or lemon zest to enhance the flavor.
