  1. In a food processor or blender, combine the chickpeas, olive oil, lemon juice, tahini, garlic, cumin, paprika, adobo and a tablespoon of water. Puree the mixture until it is smooth and creamy, about a minute. 
  2. In a medium bowl, combine olives, capers, tomatoes, onion, parsley and hot sauce (optional). This should make about two cups of sauce. 
  3. To serve; with the helps of a spoon, spread the hummus in a circular way and flatten it. After spreading it, create a hollow space in the middle of the hummus and incorporate the sauce (another alternative to serve is to place the hummus and the sauce in layers, alternating them). 
  4. At the end drizzle a little olive oil if desired. Accompany with salt crackers.
