Wake up every day with a radiant breakfast! Prepare this amazing Sweet Potato and Egg Quinoa Breakfast that tastes delicious and will make you feel great too. In this recipe, chopped potato is sautéed with an abundance of healthy vegetables and spices, including spinach, spring onions, sun-dried tomatoes and paprika. The tender vegetables are combined with GOYA® Organic White Quinoa, cooked. Serve with a fried egg if desired and start your day.

Rations:
  • 3 tablespoon of Aceite de Oliva Único
  • 2 sweet potatoes
  • 1.5 cups of spinach
  • 4 large chives
  • 0.25 dried of tomatoes
  • 1 teaspoon of ground paprika
  • 0.5 teaspoon of salt
  • 0.75 teaspoon of pepper
  • 1 tablespoon of GOYA Quinoa
  • 4 large eggs

Preparation

  1. In a large frying pan over medium heat, heat 2 tablespoons of oil. Then add the sweet potatoes, cover and cook. Stir occasionally until almost tender, about 10 minutes.
  2. Stir in the spinach, spring onions, sun-dried tomatoes, paprika, salt and pepper. Level the mixture and top with the quinoa. Cover and simmer over medium-low heat until vegetables are tender, about 5 minutes.
  3. Separately, heat 1 tablespoon oil in a large skillet over medium heat. Place eggs in skillet, cover and cook to desired doneness. Serve over quinoa with sweet potato.
