A delicious Caribbean classic dessert. Coconut Flan derives its deliciousness from the classic dessert, but if you are a coconut lover you can add a more Caribbean touch, you will surely enjoy it even more. To do so, we suggest adding two delicious products: GOYA Coconut Milk and the smoothness of GOYA Cream of Coconut. With these touches you will be transported to the tropics.

  • 1 pinch of raspberries and mint

Preparation

  1. Heat oven to 325° F. and in a small saucepan bring sugar and ½ cup water to a boil over medium-high heat until sugar dissolves. Using a wet pastry brush, remove any remaining sugar stuck to the sides of the pan. Cook without stirring, only moving the pan in a circular motion until the sugar turns brown in colour, about 10 minutes. Carefully pour this hot caramel into 8 small moulds and allow to cool.
  2. In a large bowl, beat the eggs with a whisk until well blended. Add GOYA Coconut Cream, condensed milk, coconut milk and vanilla and beat until smooth. Divide the mixture evenly among the above moulds.
  3. Place ramekins in a baking dish, and pour in enough hot water to come halfway up the outside of the ramekins. Cover with aluminium foil and place the pan on the middle rack of the oven and leave in the oven until the flans are firm but jiggly in the centre, 1 to 1 1/4 hours. Using tongs, carefully remove the moulds from the water. Transfer to the refrigerator to cool completely.
  4. When ready to serve, run a butter knife around the edges and turn out onto plates. Garnish with raspberries and mint leaves if desired.

GOYA TIP FOR THIS RECIPE:

When making flan, the key to success is to cook it in a water bath or bain-marie: the water distributes the heat from the oven to cook the custard gently and result in that characteristic soft consistency. To make sure the water bath is working properly, check it several times during cooking. If the water is evaporating too quickly, add a little more. If the water is boiling, add a few ice cubes to cool it down quickly.
