Ingredients

Rations:

Necesary

  • 250 gr of beef sirloin
  • 2 tablespoons of minced onion
  • 1 quail egg
  • 1 tablespoon of Worcestershire sauce
  • 4 gouts of tabasco
  • 1 tablespoon of mayonnaise
  • 1 teaspoon of Dijon mustard
  • 4 tablespoons of Aceite de Oliva Único
  • 1 teaspoon of salt and freshly ground black pepper
  • 1 half lime

To accompany

  • 100 gr of pickled gherkins
  • 50 gr of pickled chives
  • 250 gr of whole grain rye bread
  • 2 fresh parsley leaves
  • 100 gr of capers

Preparation

  1. First, mince the veal using a food processor. It can also be cut into small cubes with a knife.
  2. Place the meat in a bowl and add the chopped onion. Then add the pepper, Tabasco, mustard, mayonnaise and Worcestershire sauce. Add the salt, the juice of half a lime and the Único Extra Virgin Olive Oil.
  3. Mix all the ingredients well and leave to marinate in the fridge for 30 minutes.
  4. After half an hour, serve in a round mould. As a final touch, dip the centre of the tartar a little with a spoon and place the yolk of a quail's egg. Then carefully remove the mould.
  5. Serve garnished with a little chopped fresh parsley and capers, gherkins and pickled spring onions to accompany.
  6. Once at the table, mix everything together and enjoy - don't forget to serve with slices of toast!
