Quinoa with Sweet Potato and Egg Breakfast

Wake up every day with a radiant breakfast! Prepare this amazing Sweet Potato and Egg Quinoa Breakfast that tastes delicious and will make you feel great too. In this recipe, chopped potato is sautéed with an abundance of healthy vegetables and spices, including spinach, scallions, sun-dried tomatoes and paprika. The tender vegetables are combined with GOYA® Organic White Quinoa, cooked. Serve with a fried egg, if desired, to start your day.

  1. In a large skillet over medium heat, heat 2 tablespoons of oil. Then add the sweet potatoes, cover and let cook. Stir occasionally until almost tender, about 10 minutes.
  2. Stir in spinach, scallions, sun-dried tomatoes, paprika, salt and pepper. Level the mixture and top with the quinoa. Cover and simmer over medium-low heat until vegetables are tender, about 5 minutes.
  3. Separately, heat 1 tablespoon of oil in a large skillet over medium heat. Place eggs in skillet, cover and let cook to desired doneness. Serve over quinoa with sweet potato.
