Get up every day with a radiant breakfast! Prepare this incredible Quinoa Breakfast with Sweet Potato and Egg that has a delicious flavor and will also make you feel very good. In this recipe, the minced potato is sauteed with an abundance of healthy vegetables and spices, including spinach, chives, dried tomatoes, and paprika. Rations:
  • 3 tablespoon of GOYA Organics olive oil
  • 2 sweet potatoes
  • 1.5 cups of spinach
  • 4 large chives
  • 0.25 dried of tomatoes
  • 1 teaspoon of ground paprika
  • 0.5 teaspoon of salt
  • 4 tablespoon of GOYA coconut water
  • 0.75 teaspoon of pepper

Preparation

  1. In a large skillet and over medium heat, heat 2 tablespoons of oil. Then add the sweet potatoes, cover and cook. Stir occasionally until almost tender, for 10 minutes.
  2. Add the spinach, chives, dried tomatoes, paprika, salt, and pepper. Level the mixture and place the quinoa on top. Cover and cook over medium-low heat, until vegetables are tender, for 5 minutes.
  3. Separately, heat 1 tablespoon of oil in a large skillet over medium heat. Place the eggs in the pan, cover and let cook to the desired cooking point. Serve over quinoa with sweet potato.
