  1. In a large skillet or saucepan with a lid, heat a tablespoon of olive oil over medium-high heat; Once hot, add the ground sausage, breaking up the large chunks, and cook for about 5 minutes. Remove from heat and set aside.
  2. In the same pan, add the remaining tablespoon of olive oil; onion, fennel, celery, carrot, and mushrooms. Season with Adobo. Let cook about 5 more minutes or until vegetables are tender.
  3. Add the package of the quinoa mixture to the vegetables, and stir to mix everything. Add the sausage to the pan and add a cup and a half of water. When it starts to boil, cover the pan and cook for 15 to 17 minutes, or until the water is absorbed.
  4. Let stand about 5 minutes. Add parsley and serve as an accompaniment.
