Prawn Skewers with Guayaba Cover

Increase the flavor of grilled shrimp skewers with this sweet and spicy guava topper. In this recipe our Goya Guava Pasta is cooked with a pinch of red pepper flakes and with the delicious Total Goya Seasoning to create a spicy, sweet sauce to create a taste of the sea and the Caribbean. The best thing about this recipe is that these grilled shrimp or prawn skewers are prepared very quickly.

For the guava topping

  • 0.5 kg of large peeled prawns (from 16 to 20)
  • 1 tablespoon of minced garlic
  • 1 unit of mango, sliced
  • 1 tablespoon of finely chopped coriander (optional)


  1. In a small pot over medium- high heat, bring the guava paste, water, adobo, red pepper flakes and complete seasoning to boil, stirring occasionally, until the paste is like a thick glaze, for about 7 minutes. Transfer the varnish to a container to cool. 
  2. In a medium bowl, mix the prawns, garlic, season with the marinade. Place the shrimp and mango slices on the four skewers. Tip: Soak the wooden skewers in water for 20 minutes before grilling, to avoid burning. 
  3. Heat grill over medium high heat. With a brush, coat one side of the skewers with the reserved guava glaze. Place skewers coated side down on greased grill grates. Use the brush again to coat the top of the skewers with the varnish. Let them cook, covering with the guava glaze and turning occasionally, until the prawns are pink and the mango changes color and is tender, about 5 minutes. Arrange skewers on a plate and sprinkle cilantro (optional) on topo. Enjoy!
