Chickpea Chocolate Chip Cookies

These delicious chocolate chip cookies in addition to being vegetarian and gluten-free are delicious. In this sweet recipe, when the Goya Organic Chickpeas are pureed, they form a soft dough with a moist texture and a flavor similar to nuts. Besides being delicious, these legumes add a good fiber and protein content to this recipe. You just have to put the cookie dough on a tray, bake them and enjoy these novel cookies.

  • 4 tablespoon of oatmeal


  1. Heat the oven to 350ºF. Line the baking sheet with parchment paper. Mix together the drained and rinsed chickpeas, coconut oil and vanilla extract in a food processor until it is a smooth mixture, about 30 seconds. Add dark brown sugar, granulated sugar, Masarepa, vinegar, baking soda and salt to the food processor; mix until it is smooth. 
  2. Add chocolate chips and mix until they are well incorporated with the mixture. Using a tablespoon, scoop dough onto the prepared baking sheet; using wet fingers, pat down to flatten slightly. 
  3. Repeat with remaining dough to make 16 cookies. 
  4. Bake until the edges of all cookies are golden brown and then let them stand, about 15-18 minutes. Let the cookies cool down completely before serving.
