Chicken with Lemon and Spice - Change the daily routine of preparing the usual chicken with this tasty chicken with lemon and spices. The main ingredient is GOYA® Adobo with Pepper which will add a unique flavor that your family will love. Enjoy this easy-to-cook baked chicken dish, or grilled outdoors.
In a bowl, combine the olive oil, lemon juice, spices, garlic and Adobo. Pour the mixture into a large container with a lid, or in a large resealable bag. Add the chicken until completely covered. Bring to the refrigerator and let marinate for at least 2 hours, up to 24 hours maximum.
Remove the chicken from the marinade sauce and reserve the sauce. Heat the oven to 220˚C (or heat the grill over medium-high heat). Place the chicken skin up on a baking sheet lined with foil and drizzle with the marinade sauce you reserved. Sprinkle lightly with Adobo. Cook the chicken until it is browned and cooked inside (or until it registers 70˚C of temperature in the quick reading thermometer, when inserting it in the chicken thigh without touching the bone), for approximately 25 minutes.
If you are going to roast, place the chicken with the skin down on the grill with direct heat, sprinkle lightly with Adobo. Cook until the skin turns golden and crisp, about 10 minutes. Turn the chicken over and roast indirect fire, spraying it occasionally during cooking, with the reserved marinade sauce, until the chicken cooks for about 15 minutes. (Or until the internal temperature registers 70˚C on the quick-read thermometer when it is inserted into the thigh without touching the bone).
